American Pie und eine Prise Heimweh

Seit einer Stunde bin ich wieder zurück in den eigenen vier Wänden. Zwei Wochen habe ich in meiner alten Heimatstadt Passau verbracht. Seit ich für das Studium vor sage und schreibe 10 Jahren ausgezogen bin, versuche ich ein bis zweimal im Jahr nach Hause zu kommen. Jetzt, wo ich wieder hier bin, vermisse ich alles ganz schrecklich: den schönen blauen Himmel, die Wärme, den Dialekt. Ein Apfelstrudel von Mama würde jetzt sicherlich etwas helfen. Leider sind weder Apfelstrudel-Zutaten noch Mama im Haus.

Hilft nix, dann berichte ich jetzt einfach über den American Pie, den ich vor ein paar Wochen zusammen mit einer Freundin gebacken habe. Meine Freundin brachte das Rezept aus New York mit, wo sie vor Jahren mal einen Backkurs besuchte. Der Kuchen hat mich geschmacklich umgehauen. Aber Vorsicht: Plant genügend Zeit ein!

Rezept

20er Tarte-Form

> 11 1/4 oz. (2 1/2 cups) all-purpose flour
> 1 Tbs. sugar
> 1/2 tsp. salt
> 4 oz. (8 Tbs.) cold unsalted butter, cut in 1/2-inch pieces
> 1/4 cup cold vegetable shortening (e. g. Palmin), cut in 1/2-inch pieces
> 1/4 cup plus 2 Tbs. very cold water
> 2 tsp. fresh lemon juice

> 3 lb. apples, peeled and cored, and cut into 3/4-inch chunks
> 2/3 cup packed dark brown sugar
> 3 Tbs. all-purpose flour
> 1 tsp. ground cinnamon
> 1 tsp. vanilla extract
> 1/4 tsp. ground nutmeg
> Pinch salt

In a large bowl, mix the flour, sugar and salt. With our finger tips, blend in the butter and the shortening until the mixture looks crumbly and resembles various-size peas. Add the water and lemon juice. Mix with your finger tips until the dough is blended and just comes away from the sides of the bowl. You should see distinct flecks of butter. Dump onto a work surface and gently shape into two six-inch disks. Wrap in plastic; chill at least one hour before rolling.

Toss all the ingredients for the filling together in a large bowl until well-blended. Pile into an unbaked pie shell and top with a lattice, crumb, or solid top. Crimp as desired; Brush with egg wash if you like. Bake at 425 Fahrenheit for 15 minutes. Reduce the heat to 350 Fahrenheit and bake until the crust is golden and the fruit is tender, about another 50 minutes.
